Development of innovative wines for the enhancement of traditional and neglected grape varieties from Piedmont

The aim of the project is to meet the demand of the wine market today more oriented to historical varieties significant for the territory. In order to enhance local grape varieties “forgotten” (currently under-used), specific wine making techniques, suited to their characteristics and capable of giving distinct and market appealing wines, will be developed. In cooperation with the Vignaioli Piemontesi, the Di.SAFA (University of Turin) and his experimental winery, and local farms, a detail knowledge of grape composition and grape potential will be processed and used for developing small / medium scale winemaking protocols.
For some important Piedmontese varietal wines, currently encountering marketing difficulties, innovative technical production will be experimented so as to improve wine competitiveness.
